Cranberry Orange Bread
- 2 cups flour
- 1 cup sugar
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- ¼ cup butter
- 1 well beaten egg
- ¾ cup orange juice (about two oranges)
- Grated zest of one orange
- 2 cups chopped cranberries
- ½ cup chopped nuts
- Heat the oven to 350 degrees and grease a loaf pan.
- Sift together the flour sugar, baking powder and soda, and salt.
- Cut in the butter, then combine the egg, orange juice and orange zest.
- Pour into the dry ingredients and butter mixture and combine well. Dough will be stiff.
- Fold in the chopped cranberries and nuts.
- Spread in a nine by five loaf pan, leaving the center slightly higher.
- Bake for one hour.
- Let cool for ten minutes before removing from pan.
- Store overnight before slicing.
